24 HOUR FRUIT SALAD
Helen in Lundar gave me this recipe around 2002. Great for potluck picnic lunch!
4 egg yolks, beaten
¼ tsp salt
Juice of 1 lemon, about ¼ cup
¼ cup cream
3 tbsp sugar
Mix together the above ingredients in the top of a double boiler. Cook until thick.
Then cool and add:
1 cup whipped cream
1 can pineapple chunks, drained
1 can mandarin oranges, drained
1 can fruit cocktail, drained
1 pkg mini marshmallows
½ cup slivered almonds or chopped pecans
Optional fruit: grapes, banana slices, strawberries
Stir all together and cover and refrigerate for 24 hrs.
