- 1 lb ground chicken or turkey, cooked (you could use leftover turkey or buy a roast chicken and shred the meat)
- 1 cup chopped onion
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- 4-6 cups water
- 2 cubes chicken bouillon
- 1 15oz can white kidney beans, drained (this could be doubled if you like beans and half the beans could be pureed to thicken the soup)
- 1 can corn, drained
- 1 4oz can diced green chilies
- 1 7oz can salsa verde
In a dutch oven, sauté the onion and garlic in about 1 cup of the water. Add the boullion cube, cumin and remaining water, heat until boullion cube is dissolved. Add remaining ingredients and heat through. Serve hot in bowls with optional toppings.
