BEAN DIP OF LA MANCHA - a Veggie Tales recipe
1- 16oz can refried beans
1 tsp cumin 1 tsp garlic powder 2 large avocados 2 tsp grated onion 1 cup sour cream 2 cups shredded Mexican cheese 1 cup green onion 1 cup tomatoes, chopped |
Directions:
Stir together beans, cumin, garlic powder. Spread as the base onto a serving platter. Mash the avocado and mix with the grated onion. Spread gently over top of the beans, leaving about 1 cm all around the edge. Top the avocado with the one cup of sour cream. Spread and once again leave about 1 cm around the edge of the avocado. Sprinkle on the cheese, green onion and tomato. Serve with tortilla chips or pita chips. |
