Baked Oatmeal
This is almost like eating cake for breakfast!
I got this recipe from another homeschool mom.
She mixes it right in the pan that she's gonna bake it in and usually doubles the recipe too!
This recipe makes 9 generous squares in a 9x9 cake pan.

Ingredients: 3 cups Oatmeal (quick or old fashioned, but not instant) 2 tsp. baking powder 1/2 tsp. salt 1/2 tsp. cinnamon 3/4 cup granulated sugar 1 cup milk 2 eggs 1/2 cup vegetable oil optional: 3/4 - 1 cup raisins, chocolate chips, craisins, nuts, shredded apples, seeds or whatever. Our kids don't actually like any of the optional ingredients in it, adults usually do though. |
Directions: 1) Preheat oven to 350* F. 2) Spray a 9" square baking pan with cooking spray. 3) Mix oatmeal, baking powder, salt, cinnamon, sugar and raisins together in a bowl or directly in the pan if you wish. 4) Mix together the milk, eggs and vegetable oil in a large measuring cup. 5) Make a well in the center of the dry ingredients. Pour the milk mixture into the well. 6) Gently stir, mix until blended. 7) Bake for 20 - 25 minutes at 350. 8) Cut into 9 squares and serve with milk. Leftovers taste good the next day too! |
