Ingredients:
3 eggs 2 cups flour
1 1/2 cups sugar 2 tsp b powder
1 cup oil 2 tsp cinnamon
2 cups canned or mashed pumpkin 1 tsp salt
1 tsp b soda
Beat together eggs, sugar, oil and pumpkin. In a separate bowl mix all dry ingredients. Stir dry ingredients into the egg mixture. Do not over beat. Pour into a large greased or parchment lined cookie sheet (10x15) . Bake at 350, 25-30 min.
Cream Cheese Icing (might cover 2 cakes)
250g cream cheese
1/2 cup butter
1 tsp vanilla
2 cups icing sugar
Soften the cream cheese and butter to room temperature. Cream together then add vanilla and beat in icing sugar. Spread over cooled cake.
