Pumpkin Cookies
I got this wonderful recipe from Tricia. These cookies are soft and nutrient dense! Delicious!
2 cups flour
2 cups oats, quick
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
1 cup butter, softened
1 cup brown sugar
1 cup white sugar
2 tbsp maple syrup
1 egg
1 tsp vanilla
1 cup pumpkin puree
1 cup craisins
1 cup raisins
1 cup chocolate chips
1 cup nuts/seeds *
*pumpkin seeds, chia seeds, sunflower seeds
Preheat oven to 350. Combine dry ingredients in a bowl. In another bowl, cream butter with sugars. Stir in the maple syrup, egg and vanilla. Stir in pumpkin puree. Mix in the remainder of the ingredients.
Drop by heaping tablespoon (or scoop, approx ¼ cup) onto parchment lined pan, 12 cookies per pan.
Bake for 20-25 minutes until lightly browned. Place cookies onto a cooking rack.
