Chicken Noodle Soup like Grandma Toews makes with homemade egg noodles!
Curt is now the regular noodle maker! This is perfect comfort food!
stewing hen: Cover with 6-8 L cold water and bring to a boil. Skim off scum as it forms. Simmer slowly for 2- 3 hours until well done. Add more water as needed. Remove bird from broth and separate meat from skin and bones and cut into bite size pieces. Stir meat back into broth or serve on a platter to be added into bowls at the table.
30 minutes before serving add to the broth: 1 large onion, diced salt to taste 1 bunch parsley chopped 12 whole peppercorns 1 bay leaf 2 pieces star aniseed
egg noodles: 6 eggs 3 -4 cups of flour 1 tsp salt
Curt makes this by putting 3 cups of flour and the salt into the bowl of a kitchen aid mixer and makes a well in the center. Add the eggs into the well. Using the dough hook mix until a ball forms. If it's very sticky he adds a bit more flour and continues to knead it with the dough hook. Removing the ball of dough from the bowl, he sometimes kneads in more flour by hand to make a stiff dough. Let dough rest at least 1/2 an hour before starting to make the noodles. Follow direction on noodle maker for skinny noodles. Curt is happy to have a pasta maker attachment and a noodle drying rack!
