CHILI CON QUESO
This warm cheese dip is served with tortilla chips and reminds us of the dip they used to serve at Chi Chi's.
500g processed cheese (velveeta)
1 ¼ cup heavy cream
1 - 4oz can chopped green chilies
¼ cup finely chopped green pepper, cooked in microwave
1 tbsp chopped pimento (or substitute cooked red bell pepper)
Cut the cheese into small cubes. In a large microwave safe bowl, add all of the ingredients and stir. Heat in a microwave for 3 minutes. Stir and continue to heat, stirring frequently until heated through and smooth.
Serve warm with tortilla chips for dipping.
