Onion Salad
Roberta in Lynn Lake introduced us to this fabulous salad in 2001. Definitely worth making this. Perfect side dish for a BBQ!
Ingredients:
6-8 onions, sliced in rings
Brine:
1 ½ cups water
1 ½ cups vinegar
2 ¼ cups sugar
2 tbsp salt
Dressing:
1 ½ cups mayonaisse
3 tsp celery seed
Salt and Pepper to taste.
Mix brine ingredients into a pot and bring to a boil for 5-10 minutes until sugar and salt are completely dissolved. Pour hot brine over onion slices and leave it on counter for minimum of 5 hours or overnight. Drain well.
Mix dressing ingredients and stir into drained, brined onions. Refrigerate for at least 3 hours. Serve as a side dish for potluck, BBQ or picnic. It's a big recipe and will feed a crowd! Keeps well.
