Thai Fresh Spring Rolls
Spring rolls are a quick, no cook meal and are surprisingly easy to make. Be sure to make a dipping sauce to serve along with your spring rolls!
Ingredients:
Peanut Sauce is a fabulous choice to go with these spring rolls:
Nuoc Cham (Vietnamese Dipping Sauce) goes great with this. Store bought or this recipe:
1/4 cup sugar
1/2 cup hot/warm water
1/4 cup fish sauce
1/4 cup white vinegar
1/8 cup lime juice
2 cloves of garlic, minced
1 tsp grated carrot
Dissolved sugar in hot water and add in the rest, mixed well. Store any extra in the refrigerator.
You can add minced chili pepper if you like it spicy.

- 1/2 cup bean sprouts
- 1/3 head of green cabbage, chopped
- 5 green onions, chopped
- 1 cup thin rice noodles, pre-cooked
- 1/4 cup fresh herbs (use cilantro, basil or mint, your choice)
- 1/4 cup carrots, grated or julienned
- 1 tbsp lime juice
- 1 tbsp soy sauce
- 1/2 tsp fresh ginger, grated (optional)
