MONSTER COOKIES - gluten free, flourless
This is a huge recipe using peanut butter and 9 cups of oatmeal! You decide if you want to use oatmeal that is certified gluten free.
A few people in our family have gluten sensitivity so we make this recipe often!

- 1 cup butter, softened (not melted)
- 2 cups white sugar
- 2 cups brown sugar, packed
- 3 cups peanut butter, smooth or crunchy
- 6 large eggs
- 1 1/2 teaspoons corn syrup
- 1 1/2 teaspoons vanilla extract
- 4 teaspoons baking soda
- 9 cups quick cook oats
- 2 cups M&M's (note that Smarties are not gluten free)
- 2 cups milk chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Cream together the butter, sugars, and peanut butter until smooth.
- Stir in the beaten eggs, corn syrup and vanilla.
- Mix in baking soda and oats until well blended.
- Stir in the M&Ms and chocolate chips.
- Form the dough into about 2 inch balls and place on parchment lined cookie sheets. Flatten the dough slightly.
- Bake for 10 to 12 minutes at 350 degrees.
- Allow to cool for a few minutes on the cookie sheet, then transfer them to wire racks to cool completely.
- These cookies freeze well! We also sometimes freeze some of the dough prior to baking by rolling it in a log shape and wrapping it in plastic wrap. This makes it easy to bake fresh cookies at a moment's notice!
