Jam Jams
I got this recipe from Mrs. Thiessen, a sweet old lady that lived across the street from us when I was a kid. It's definitely a Christmas tradition to make these! We often use homemade strawberry jam, sometimes raspberry. I might try plum jam this year, like my mom used to do.

3/4 cup oil
1 cup brown sugar 1/3 cup corn syrup 2 eggs, beaten 1 tsp vanilla 1 ½ tsp baking soda dissolved in 3 tbsp hot water 4 cups flour Mix ingredients in order given. Knead dough on counter with flour. Roll out thin and cut with small round cookie cutters. Bake for 6-7 minutes at 350. Cool cookies then spread a small amount of jam on the bottom of one cookie and add another cookie to make a ‘sandwich’. Alternative recipe from my M-I-L: 2 eggs, beaten 1 cup brown sugar 3/4 cup shortening 1/3 cup syrup 2 tsp baking soda 1 tsp lemon or vanilla 2 1/2 cups flour Use the mixing and forming directions above. Bake at 375 for 5-10 minutes, watch closely. Cool and spread with jam and make sandwiches as above. Jam Jams taste wonderful after they've been frozen. Definitely store them in a sealed container which keeps them soft. |
